Easy bachelor's chicken soup 🍲
Ingredients:
- 2 boneless, skinless chicken breasts 🍗
- 6 cups chicken broth (made by boiling chicken in water) 🥣
- 1 onion, chopped 🧅
- 2 carrots, peeled and sliced 🥕
- 2 celery stalks, sliced 🥬
- 2 cloves garlic, minced 🧄
- 1 teaspoon dried oregano 🌿
- Salt and pepper to taste 🧂
- 1 cup uncooked noodles (optional) 🍝
- Fresh parsley, chopped (for garnish, optional) 🌿
Instructions:
1. In a large pot, combine the chicken broth, chopped onion, sliced carrots, sliced celery, minced garlic, dried thyme, and dried oregano.
2. Bring the mixture to a boil over medium-high heat.
3. Once boiling, add the boneless, skinless chicken breasts to the pot.
4. Reduce the heat to low, cover the pot, and let the soup simmer for about 20-25 minutes, or until the chicken is cooked through and tender.
5. Remove the chicken breasts from the pot and transfer them to a cutting board. Use two forks to shred the chicken into bite-sized pieces.
6. Return the shredded chicken to the pot. If you're adding pasta or rice, stir it into the soup at this point.
7. Continue to simmer the soup for an additional 10-15 minutes, or until the pasta or rice is cooked through and tender.
8. Season the soup with salt and pepper to taste.
9. Ladle the chicken soup into bowls and garnish with freshly chopped parsley if desired.
