Chicken pasta 🍝


Ingredients:

- 8 ounces pasta (any pasta)

- 2 boneless, skinless chicken breasts, cut into bite-sized pieces

- 2 tablespoons oil of your choice 

- 2 cloves garlic, minced

- 1 small onion, finely chopped

- 1 bell pepper, chopped

- 1 cup sliced mushrooms (optional)

- 1 can (14.5 ounces) diced tomatoes

- 1/2 cup chicken broth

- 1 teaspoon dried Italian seasoning

- Salt and pepper to taste

- Grated cheese for garnish

- Chopped fresh parsley for garnish


Instructions:

1. Cook the pasta according to package instructions until al dente. Drain and set aside.

2. In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and cook until they are browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

3. In the same skillet, add a bit more olive oil if needed. Add the garlic, onion, bell pepper, and mushrooms (if using). Sauté until the vegetables are tender, about 5 minutes.

4. Add the diced tomatoes (with their juices), chicken broth, and dried Italian seasoning to the skillet. Stir to combine and bring to a simmer.

5. Return the cooked chicken to the skillet and let everything simmer together for about 5 minutes, allowing the flavors to meld.

6. Season with salt and pepper to taste.

7. Add the cooked pasta to the skillet and toss everything together until the pasta is coated in the sauce and heated through.

8. Serve the chicken pasta hot, garnished with grated Parmesan cheese and chopped fresh parsley.
