Malabar carrot pola π₯ Ingredients: - π₯ 2 cups carrots, roughly chopped - π₯ 3 eggs - 1/2 cup sugar (adjust to taste) - 1/4 teaspoon cardamom powder - 2 tablespoons ghee (clarified butter) - π₯ 3 tablespoons milk powder - Handful of raisins and cashew nuts for garnish π₯ Instructions: 1. Boil and Blend Carrots:Boil the roughly chopped carrots until soft and tender. Drain any excess water and transfer them to a blender. Add eggs, sugar, cardamom powder, ghee, and milk powder to the blender. Blend until you get a smooth paste. 2. Cooking: Heat a pan and spread ghee on the bottom and sides. Pour the carrot mixture into the pan and spread it evenly. Before covering the pan with a lid, sprinkle a handful of raisins and cashew nuts evenly over the top of the carrot mixture. 3. Cook Until Set: Cover the pan with a lid and cook on low heat until the pola is set and cooked through, usually for about 15-20 minutes. 4.
